Last weekend I tried my hand at carrot cake cupcakes. This was my first attempt and I must say that they came out even better than expected. I have to attribute it to my mom’s amazing recipe and advice. The cupcakes are covered in a cottage cheese frosting and tossed with pecan nuts.
